Ingredients
For Chicken or Veg Marinade:
(Choose either chicken or mixed
vegetables)
- 500g chicken (bone-in preferred) OR
2 cups mixed vegetables (potato, carrot, beans, peas)
- 1/2 cup thick yogurt (Greek-style or hung
curd)
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1 tbsp lemon juice
- Salt to taste
- 2 tbsp fried onions (store-bought or homemade)
For Rice:
- 2 cups basmati rice (long-grain, soaked 30
mins)
- 5 cups water
- Salt to taste
- 1 bay leaf
- 3 cloves, 2 cardamom, 1 cinnamon stick
For Biryani Assembly:
- 2 tbsp ghee or oil
- 1/4 cup fried onions
- Few saffron strands soaked in 2 tbsp warm
milk (optional)
- Fresh mint and cilantro leaves (chopped)
- 1/4 tsp rose or kewra water (optional)
🔥 Instructions
Step 1: Marinate
- Mix chicken or vegetables with all marinade
ingredients.
- Cover and refrigerate for at least 1 hour (overnight for best flavor if using chicken).
Step 2: Parboil Rice
- Boil 5 cups water with salt, bay leaf, and
whole spices.
- Add soaked rice and cook till 70%
done (still a bit firm).
- Drain and set aside.
Step 3: Cook Chicken or Veg (if not using raw
dum)
- In a wide pan, heat 1 tbsp oil and sear
marinated chicken or veggies for 5–6 minutes.
- Turn off the heat. You don’t need to fully cook it—just a head start.
Step 4: Assemble Dum Biryani
- In a deep, heavy-bottom pan, layer as
follows:
- Bottom: Half-cooked chicken or vegetables
- Middle: Half the parboiled rice
- Sprinkle some fried onions, mint, cilantro,
and saffron milk
- Repeat with remaining rice and toppings
- Cover tightly with a lid. Seal edges with dough or a heavy cloth (if possible) to trap steam.
Step 5: Dum Cook
- Place the biryani pot on low flame for 25–30
minutes.
- Optionally, place a griddle (tawa) under the pot for even heat.
